  • Next take a pot or pan. Heat some ghee over medium heat. Add in the bay leaf cloves, cardamom and cinnamon stick.
  • Sauté them for a minute until they release their fragrance.
  • Now add the sliced onions and green chilies. Fry them until the onions turn a brown color.
  • If you prefer you can also add cashews and raisins at this point. Fry them until they become golden well.
  • Once everything is nicely cooked up to this point gently stir in the soaked rice to coat it with the flavors of ghee and spices.
  • Pour in some water. Add salt according to your taste. Bring it all to a boil.
  • After that reduce the heat to low cover the pot with a lid allowing it to simmer slowly until all the water is absorbed by the rice. Its perfectly cooked through.
  • Finally fluff up the rice gently with a fork, before serving it piping hot.
